Makes about 24
The perfect sweet-tooth tamer to impress guests. With no tempering and no sweat, it’s also no fuss for you.
1 cup almond meal from Almond Milk
1 cup pitted dates
1/2 cup cacao nibs
2 tablespoons coconut oil
1 teaspoon vanilla
Pinch sea salt
1 tablespoon cacao powder
Put everything except the cacao powder in a high-speed blender or food processor and blend until smooth, scraping the mixture down with a spatula as needed. Chill in the freezer for about 30 minutes, then roll into truffles before dusting with cacao powder.
